Coca Cola Cake

I grew up eating this scrumptious cake. I don’t bake it as often as I would like because honestly I can’t stop eating it! This cake does not equal diet on any level of excuses but I will grab a fork and savor a few bites when I walk through the kitchen until it is gone and then I will be sad. It is seriously that good. I decided to make it for a birthday dinner I hosted for a girlfriend of mine who loves chocolate. The cake is moist, not too chocolaty, and actually very easy to make. Here are the ingredients:

1 Mix the dry ingredients. In a large bowl, whisk together 2 cups of flour and 2 cups of sugar. Set aside
2 Make the coke mixture. Place a saucepan over medium high heat and add two sticks (1 cup) of unsalted butter. Add a cup of coca cola and 1 1/2 cups of mini marshmallows. Lastly add 3 Tbsps unsweetened cocoa powder. Stir the sauce until everything is all melted together and turn off the heat. While that cools for a minute, make the buttermilk mixture.

3 Make the buttermilk mixture. Shake up the buttermilk and pour 1/2 cup in to a measuring cup. Add two eggs and whisk together. Then add a teaspoon each of baking soda and vanilla extract. Whisk it together and set aside.
4 Batter up! Pour the cola mix in to the dry ingredients bowl and whisk until all the flour is mixed in. Now add the buttermilk mix and whisk that in until well incorporated.

3 Bake it real good. Pour the batter in to a greased 9×13 and put in a preheated to 350 oven. I have learned through my years of cooking that the timer is my friend so I do set a timer for 35 minutes. After this time, check with a toothpick through the middle of the cake. If it comes out clean, the cake is done.
Ready to bake!

4 Let’s make the frosting. You could make just this frosting and pour it over ice cream, yum. Brace yourself, it is Sweet! First, chop 1/2 cup of pecans. Next, heat a saucepan over medium high heat and add a stick (1/2 cup) unsalted butter. Stir in 6 Tbsps coca cola and 1 Tbsp unsweetened cocoa powder. Bring to a boil and mix this together well. Now gradually stir in a box of confectioners sugar. Turn off the heat once it is all incorporated. Add the chopped pecans.
The pecans are optional but I love the texture they add to the frosting.

5 Frost the cake. While the cake and frosting are still very warm, pour the frosting right from the saucepan on to the cake. It will cover the cake and set while it cools. This is my first test of willpower to NOT cut a slice while it is still warm!
