This dinner of Shrimp Feta Pasta is a play on a TikTok trend. I do not have TikTok but I can’t miss trying a food trend! This easy recipe was so popular, many stores simply sold out of blocks of feta cheese. I could not find a block so my pasta dish is made with a package of crumbled feta cheese. In the videos, cherry tomatoes are tossed with olive oil and seasonings then placed in a baking dish. The block of feta is centered in the middle of the tomatoes then baked. After baking, the tomatoes will burst and the feta will melt in to a yummy sauce. Pour it all over cooked pasta and toss. Done. Here are the directions I followed…TikTok Baked Feta Pasta.
I added shrimp and spinach to mine basically because I can’t seem to leave a recipe alone. Plus shrimp.
Preheat the oven to 400. In baking dish, toss 2 cups of cherry tomatoes with olive oil, italian seasoning, salt and pepper. Bake for 20 minutes. While those little gems are roasting, prep shrimp by deveining and removing the tails.
Remove the baking pan from the oven and push the tomatoes around the edges of the pan. Put the shrimp in the center, pushing them out to make a center area for the feta. Sprinkle garlic over the entire pan and drizzle with olive oil. The pan goes back in the oven for 10 minutes. While this concoction is baking, cook pasta according to directions to al dente. Tear up a cup of fresh spinach.
When you remove the pan, lightly smash the tomatoes with a fork so they will burst and spread tomato love. Toss the spinach on top of the hot ingredients and Stir it all together. Fold in drained pasta, about 10 ounces is all you need so the dish stays saucy.
So delicious and 30 minutes to the plate!
