Southern Fried Corn

This side dish of corn is so delicious. It really highlights the fresh yummy taste of corn. I feel like some southern mama many many years ago came up with fried corn to use an abundance of corn from the field and was just plain tired of corn on the cob.That was a lot of corns. Corny I know.
I’m having friends over for dinner and this corn will go great with the elk cube steaks with gravy. Here are the ingredients:

Yes that little tupperware is bacon grease. Sorry not sorry.

1 Prep the corn. I cut the kernels off the cobs directly in to the skillet I am using to fry it. This way all the flavorful corn juice (Really!) also goes in to the skillet. Once all the kernels are cut off, use a spoon to scrap the cob down in to the skillet to get all the yummy juice you can. This will intensify the fresh corn flavor.
An ear per serving. I have 4 cobs for 4 people.

2 Add ingredients. The skillet goes on the stove at med high heat. Add the bacon grease, cornstarch and sugar. Stir and fry until the corn mix is thickened, about 5 minutes. Add the milk and cook another 5 minutes.
My granny always had a jar of bacon grease on the stovetop.

3 Fry it up. Now add the butter. Continue to stir and fry for about 10 minutes.

Your southern fried corn is ready to serve!
